Google Earth can accept most coordinate entry systems, and dd mm.mmm is one of the more common. If you want to do conversions, that's up to you. Which method you use to enter WGS84 coordinates is a matter of convenience only, and dd mm.mmm is the most convenient for use with GPS receivers. You can certainly display the entire earth using a Mercator projection, but it's not nearly as accurate as a globe. It's useful only for displaying small portions of the earth on a piece of paper. It works over small distances, but the further apart the waypoints, the more inaccurate it becomes. It's not as accurate as a real spherical system, like WGS84. UTM is an attempt (an attempt only, and only partially successful) to display a sphere on a plane.
